Miracle Whip Banana Bread

My neighbor, Nancy, stopped in Tuesday morning for coffee and brought a loaf of banana bread. It was delicious and, as we sat and ate and drank our coffee, I asked her what made it so moist and yummy. She asked me to guess…I just rattled off the ingredients that I knew went into banana bread (actually, I listed the ingredients on the back of the banana nut mix that I always use and to which I add an extra banana, a little sour cream and chopped walnuts or pecans). We laughed about it and then I suggested she had added sour cream as well. Well, it wasn’t sour cream, it was Miracle Whip Lite! I couldn’t believe it. We had the loaf nearly gone when hubby came in with one of our grandsons and they finished it. I didn’t even take a photo of it.

Then, this morning, I decided to make another one. The only thing I added was about a 1/2 bag of chopped pecans that I had left over from the pie I had made for Easter. While the bread was cooling, I went to the grocery store and did a few extra errands. When I came home, my son, his 2 sons and my husband were just finishing off the bread (even though it’s supposed to be refrigerated over night)! Didn’t even save me a crumb! Again, STILL NO PHOTO! Next time I’m going to make 2 and hide one of them!

I really want to share this recipe…it is SO good and really easy! Enjoy

Miracle Whip Banana Bread

Ingredients:

1 cup‘MIRACLE WHIP’ Light Dressing
1 cup mashed ripe bananas (about 3 bananas)
2 cups flour
3/4 cup sugar
2 tsp. baking soda

Directions:

PREHEAT oven to 350°F. Combine dressing and bananas in large bowl. Mix flour, sugar and baking soda. Add to dressing mixture; stir just until moistened. (Batter will be lumpy.)

POUR into greased 9×5-inch loaf pan.

BAKE 55 min. to 1 hour or until wooden toothpick inserted in centre comes clean. Cool in pan 10 min.; remove to wire rack. Cool completely.

Kitchen Tip:

Make it Easy
For easier slicing, wrap bread and store overnight before slicing to serve.

  1. That sounds good, but I’d have to leave the nuts out because of Bill’s diverticulitis. I use a little mayo in mashed potatoes.

  2. Hi Jude…yes, definitely leave out the nuts for Bill…I use a dab of sour cream in my smashed potatoes. Always throwing something in somewhere for diversity…LOL…Thanks for stopping in.
